A traditional proving basket helps shape dough neatly during its final rise, while encouraging a defined surface finish. The Sourdough By The Sea round banneton proofing basket is handmade from rattan and designed to wick moisture away as the dough proves.

Supplied with a cloth liner, it can be used lined or unlined depending on the finish you prefer. When used without the liner and dusted with flour, the basket leaves a distinctive spiral pattern on the loaf. Height measures 8 cm, with the width taken from the top of the basket. As a guide, the 20 cm size is the most popular and suits a standard 500 g loaf.

Use and care

• Dust the basket with rice flour, or use semolina flour as an alternative
• Shape the dough and place it upside down in the lined basket for the final rise
• Allow the dough to rise in the basket, then turn it out onto a pan or dutch oven to bake
