Pemo Pecorino 2023

From PEMO, Pecorino 2023 brings together two historic Abruzzo varieties in name: PE for Pecorino and MO for Montepulciano. Made from Pecorino grown on hillsides in Abruzzo, with vineyards all above at least 300 metres, it is crafted to preserve the grapes’ natural freshness.

In the glass, this white wine is described as very fresh, with lively citrus acidity, notes of tropical fruits and a certain minerality that helps create a balanced finish. Winemaking begins once the grapes are de-stemmed, then left in the pneumatic press with dry ice for a few hours before being softly pressed with a maximum pressure of 0.5 Atm. After fermentation, the wine is left on fine lees for at least 120 days, adding further character while keeping the style bright and precise. Versatile at the table, it suits everything from fish to soft, sharp cheeses.
