Viile Metamorfosis Via Marchizului Negru de Dragasani Red Wine

From Viile Metamorfosis, Via Marchizului Negru de Dragasani is a dry red wine from Muntenia made from Negru de Dragasani grapes. Bottled at 16% ABV, it shows an elegant, layered style with a strong body, soft structure and round tannins.

Blackberry and sun-dried tomato aromas lead the profile, followed by notes of figs, dark chocolate, black pepper and vanilla. On the palate, it is fresh, juicy and flavourful, finishing long and lingering. Vinification takes place at a controlled temperature of 28–30°C with at least three weeks of maceration, followed by maturation in barriques and cellar storage after bottling.

Serve at 14–16°C. It pairs well with stuffed wild boar muscles, smoked wild boar sausages cooked in wine sauce, lasagna with bolognese sauce, hard matured cheeses, bellows cheese, pecorino, gorgonzola, cold Romanian snacks, Ratatouille tart, eggplant meatballs with red sauce, baked cauliflower and black lentil dishes.
