Carastelec Carassia Blanc de Blancs Sparkling Wine

From Carastelec, Carassia Blanc de Blancs Brut is a traditional method sparkling wine from Crisana si Maramures with 12% ABV. Produced entirely at the estate, it is made from parcels selected for sparkling wine and undergoes bottle fermentation followed by extended ageing on the lees.

A minimum of 20 months in bottle, with this release aged for 22 months, gives the wine its fine mousse, creamy texture and pronounced autolytic character. Fresh fruit, floral notes, brioche, yeast and delicate citrus are balanced by natural acidity and dosage, leading to a long, persistent finish with fruit and white flowers. Its poised, harmonious style suits aperitif service as well as seafood, poultry, soft cheeses or light vegetable dishes.

Nose
