Barton & Guestier Chablis (750ml - 12.5%)

From Barton & Guestier, this Chablis is a white Burgundy made from 100% Chardonnay. Produced in one of Burgundy’s northernmost regions, it shows a brilliant golden-yellow colour, a fresh and lively palate, and the mineral character associated with Chablis. At 12.5% ABV, it is a poised, versatile wine that suits seafood, fish in sauce and white meats.

The wine comes from Jurassic Kimmeridgean soils and is made with low yields, careful hand-tending in the vineyard and minimal intervention during ripening. After harvest, the grapes are gently crushed and settled before slow alcoholic fermentation at 20–24C, followed by malolactic fermentation. Ageing takes place in steel vats for 3–12 months, with controlled oxidation at the start of the process.
