Castellare Toscana I Sodi di San Niccolò 2017 is a structured red wine from Castellare di Castellina, an estate formed in the 1970s when four properties came together: Castellare, Caselle, San Niccolò and Le Case. The vineyards sit on hillsides within a natural south-east-facing amphitheatre, benefiting from strong sun exposure and good water drainage, with mixed soils that include limestone marl, galestro and a little clay.

In the glass, it shows an intense ruby-red colour and a concentrated nose shaped by ripe red fruit, with notes that recall jam alongside spice, vanilla and liquorice. On the palate, a dense yet elegant texture is supported by the acidity of Sangiovese, with sweet tannins and a long, persistent finish.

At the table, it pairs particularly well with cured meats and savoury meats, succulent dishes and aged cheeses, and is especially appreciated with Tuscan Pecorino and Parmesan.
