The aroma combines herbaceous spicy leaves, fresh herbs, tangy kumquats and warm woody undertones. On the palate, it opens with sweet fruity notes, develops into bitter salad leaves and nutty almonds, and finishes with moderate pepperiness and a subtle biscuity aftertaste. Use it raw or for cooking, from salad dressings to sautéed vegetables, grilled meats and fresh bread.
