Bestue Finca Santa Sabina Cabernet Sauvignon (750ml - 14.5%)

From the Enate valley in Somontano, Huesca, Bestué Finca Santa Sabina Cabernet Sauvignon is made from 100% Cabernet Sauvignon and bottled at 14.5% ABV. The fruit comes from a 5-hectare vineyard at 400 metres above sea level, where low yields and careful irrigation support a concentrated style.

Hand-picked at dawn during the first week of October, the grapes are kept cool before vinification. Cold maceration lasts six days, with manual pump overs carried out twice daily, followed by slow, temperature-controlled fermentation and malolactic fermentation in barrel. Ageing for 15 months in a balanced mix of new oak barrels brings added depth to a wine with a structured, meaty profile and a silky, velvety palate. It suits robust dishes particularly well, including grilled or stewed meats, legumes, baked dishes and aged cheeses.
