Its character is shaped by the Kimmeridgian soils of Chablis, rich in limestone, clay and fossilised marine life including ammonites and ostrea virgula. Fermented in stainless steel tanks with native yeasts over 15 to 18 days at low temperatures, then followed by natural malolactic fermentation for several months, this is a lively, precise wine that suits refined seafood dishes.
