From Oaxaca, Camazotz Oaxacan Pot Still Rum is made from raw pressed sugar cane juice rather than molasses, giving it a fresh, vivid character centred on the cane itself. Bottled unaged at 48% ABV, this white rum offers texture and flavour without oak influence.

Hand-pressed cane juice is fermented in open-topped wooden vats with wild airborne yeast, then distilled to proof in small batches of up to 300 litres in a traditional alembic copper pot still. Its herbal, grassy and gently woody profile, with fresh sugar cane sweetness and a lightly saline finish, suits a Daiquiri particularly well, while its drier, more savoury edge also lends itself to sipping neat.
