In Masseria Borgo dei Trulli Saracena Primitivo N.V., the Saracena vineyard selection brings a distinctive expression of Primitivo from southern Puglia. Sourced from low-yielding vineyards in the Commune of Maruggio, in the Province of Taranto, this wine is made from 100% Primitivo, with an average vine age of 60 years old.

Aromas of dried fruit, exotic spices, white pepper and chocolate lead into a round, intense palate. Layers of soft, elegant tannins sit alongside notes of vanilla, prunes, coffee and underbrush, finishing with an elegant, persistent character that remains extremely well-balanced.

After harvest, the grapes are placed in small wooden crates of 5 kg each, then moved to a well-aerated loft known as the “fruttaio”. Here, they are left to dry at controlled temperature and humidity for approximately 10 days. During this “appassimento”, the grapes can lose up to 40% of their original weight in water, concentrating colour, substance and aromas.
