Rested for 8 weeks and 8 days in ex-American oak whiskey barrels, it is made using only agave, water and natural airborne yeast. The agaves are slow-roasted in brick ovens, fermented in wood vats and double pot-distilled at low temperatures, resulting in a style that combines freshness with gentle cask influence.
