Corn Salad Verte de Cambrai, also known as Lamb's Lettuce or Mâche, is a low-growing vegetable with small, thick, dark green leaves offering a delicate, nutty flavor. This versatile plant is a great addition to mixed winter salads and thrives in cool, moist conditions. Easy to grow, it can be sown from mid-August to the end of September for a winter crop or in mid-February for an early spring harvest.

Corn Salad can mature in just 50 days and can even grow through winter with proper protection, such as a cloche or unheated greenhouse. It’s suitable for most soil types in full sun or light shade and can be harvested either by picking a few leaves at a time or cutting the entire plant.
