Dr Gundry describes gluten as one form of lectin, a plant-based protein he characterises as highly toxic. He notes that lectins are found in grains such as wheat as well as in foods marketed as “gluten-free”.
Gundry argues that “diseases of ageing” are not simply caused by age, but relate to how people have lived over decades. He sets out an approach to ageing well based on supporting the health of microorganisms that live within the body.
This title expands on Gundry’s discussions of gut, microbiome and mitochondrial health. It links immune malfunction to mental and physical symptoms of fatigue, including exhaustion, brain fog, depression, anxiety and low metabolism.
Gundry outlines a biological mechanism he says helps explain the success of keto diets: a cellular process called mitochondrial uncoupling. He also states that ketones are not the “magical” fuel source they are often presented to be.
