Origin
Sofrito has its roots in the medieval Catalan period. The earliest mention of Sofrito is from the 14th century when it was made with onion and oil. From Spain, it spread to the Spanish colonies, where variations of the blend are in use today. Known as ‘sazón’ In the Dominican Republic, and balanced with vinegar and annatto seeds. It’s also called ‘recaísto’ In Puerto Rico and Cuba and contains bell peppers. Famously known as ‘mirepoix’ In France & ‘suppengrun’ in German proven that in most cases, Sofrito is the foundation upon which the rest of a recipe is built and here we have interpreted a historically versatile recipe base blend for everyday cooking.
